Roasted Tomato And A-F Bleu Cheese Spread – GOAT

Makes a little more than 5 cups
1 qt. fresh grape tomatoes – wash, place on baking sheet, bake in preheated 375 degree oven 45 minutes – 1 hour; remove from oven, cool to room temperature on baking sheet, then scoop up into covered container and refrigerate overnight
15.4 oz. can pigeon peas, drained and rinsed well by GOYA
1/2 c. finely chopped plain sun- dried tomatoes
1/3 c. tiny dice green pepper
1/3 c. tiny dice sweet red pepper
1/4 c. tiny dice sweet onion
4 peeled garlic cloves, fine chop
8 oz. animal-free plain cream cheese – I used TOFUTTI
6 oz. BLEU CHEESE CRUMBLES by FOLLOW YOUR HEART








1- Prepare roasted tomatoes per instruction.
2- Place drained, rinsed pigeon peas in large mixing bowl. Crush with pastry cutter till mealy.
3- Add 1 t. salt, 1 t. garlic powder, 1 t. dried oregano. Continue to chop and roll with pastry cutter.
4- Add cream cheese and mash and stir till incorporated.
- At this stage you could stop and use as is for a cracker and toasted bread square spread with fresh basil or parsley garnish. If you continue:
5- Add fine chop dried tomatoes, green and red pepper, onion and garlic. Mix well.
6- Add roasted grape tomatoes all at once. Using pastry cutter again cut tomatoes into spread.
7- Add 1 T. granulated sugar, fresh ground black pepper to taste, 2 t. ground coriander, 1/4 t. red cayenne pepper, 1 T. vegan yeast, 1 T. 100% lime juice by 365 WHOLE FOODS – stir after each addition.
8- Additional salt to taste.
9- Add BLEU CHEESE CRUMBLES and stir well to thoroughly incorporate.
10-Transfer entire spread to food processor.
11- Process till well-blended.
12-Add 2 t. guar gum powder and process till thickened.
13-Add more salt – I did 1 teaspoon – plus 1-3 additional Tablespoons lime juice.
- Don’t use lime juice that tastes like furniture Polish or bathroom deodorizer smells. Use fresh if a good bottled juice isn’t available. A reliable brand is Nellie & Joe’s Key West Lime Juice.
14-Liberally oil some margarine containers – mine hold 2 cups. Cover and refrigerate over night.
15- Serve with crackers and toasted, or not toasted, bread squares depending on type of bread and what holds up well.
