



Animal-Free Hotdog Pate low fat
Who would think to use hot dogs for a pate – even if made from animal hot dogs? I’ve never been served it – at a home or a restaurant. Who needs liver when you have hot dogs – animal-free of course in this and every case. Add a little raw onion, some Kalamata olives, horseradish, sage, garlic, dry mustard, fresh ground pepper – process till smooth and there it is – Pate Perfection.
Makes 2 cups
1/4 c. fine dice sweet onion
1/2 c. sm. pitted Kalamata olives, drained
13.5 oz. pkg. JUMBO SMART DOGS, thawed, by Lightlife – place in sauce pan and cover with water; bring to soft boil for about 4 minutes, remove from pan, refrigerate till not hot, then cut into chunks
1 T. prepared hoseradish
2 t. garlic powder
1 t. ground sage
1/2 t. dry mustard
1 t. salt or to taste
fresh grind black pepper to taste, we like a lot
Garnishes: If desired drizzle with a little extra virgin olive oil, sprinkle with black pepper, and top with chopped Kalamata olives.
1- Place all ingredients, except garnishes, in food processor and process till thoroughly incorporated.
2- Scrape down insides, then process again till creamy.
3- Transfer to covered storage container and refrigerate till cold and ready to serve.
4- Apply garnishes as desired.
5- Serve with crackers of choice or toasted bread squares.
Notes: Ever serve mayo with pate? This mayo lover does and I know every other mayo lover in the world will love this combo too!
